Cravin' Banana "Dream" Pie!"
This recipe started with a modified version of the Cashew Icing that Crisyn posted (shout out to Crisyn!!! Thank you!)
I just had some left in the frig and felt like a sweet and grabbed
the closest thing on my table…a banana. If you make the topping ahead of time and chill it for a while, it is thicker and IMHO tastes better for this recipe.

½ cup cashews
1 date
1 tablespoon agave or maple (not raw)
syrup
pinch himalayan salt
½ lemon or lime (juice), You can use the rind too if you like
½ almond essence, vanilla, whatever,
(optional)
water as needed to mix, but keep firm
2 bananas
.125 cup coconut flakes
Vitamix or blend or process everything except for the banana til smooth.
Serve it on top of thickly sliced banana pieces.
