Quick and easy, but most of all yummy! this is my take on the typical grated carrot salad. The tahini makes it nice and creamy and delicious.

I served mine with a side of raw baba ghanoush : )

Thanks Karuna. I didn't post a baba ghanoush recipe because there are some on this website already, but my version is:

eggplant, peeled and sliced (sprinkle it with salt and let sit overnight)

squeeze out the excess moisture and place in food processor.

add to processor a clove of garlic, 2 tbs lemon juice, 2 tbs tahini, pinch cumin, and parsley (fresh is best).

blend until desired consistency.

This made a super quick and tasty lunch, great idea. Parsley would also be great in this, but since I didn't have any I added some celery to get some green in. Thank you!

Myrtia, try an Advanced Search. Put "baba" under Containing any of the words, and "ganoush" under Containing the phrase. You should get 2 specific recipes and several others that mention baba ganoush. Check here (#2 and #3) for additional tips on using the search features.
