A little goes a long way
This pie will turn into the beautiful violet color when you mix it up. People will ask you how you made it when they taste it.
Use Frozen Blueberries
Take out of freezer a half hour before you begin your recipe.
Put one cup of cashews in the blender with just enough water to cover them. Blend until thick and creamy. You may have to move and stir or add a tab bit more water if the mixture is too thick and if you don’t have a vitamix.
Make any crust you like I eye ball everything….
I like Matt Amdsems…Throw raw (unsoaked )almonds, pinch of celtic salt, ground up in Food Processor—Pour in some agave until it begins to ball up…Press into pie plate.
Use enough blueberries for the size of your crust. You can pile it high.
Mix the cashew cream and agave to taste into the blueberries that already thawed out; Pinch of celtic salt…......Fold well
POUR mixture on to pie crust and be amazed at the reactions you will get. It is a vision to behold. And tastes OH SO GOOD. I suppose
