Creamy Cashew Icing

Servings:
Makes 2 cups.A yummy “cream cheese” icing, from Chad Sarno.
Goes well with the Carrot Cake recipe I have posted here.
Ingredients:
2 cup raw cashews, soaked
2 tablespoon lemon juice
2 tablespoon dates,
soaked
1 tablespoon coconut butter
1 teaspoon vanilla extract (or half a vanilla bean)
¼ teaspoon salt
Preparation:
Place all ingredients in a high-powered blender and process until creamy.

Anyone know if this frosting can keep well in the freezer? Maybe in a mason jar? I have so much left that I can't get through! Thanks!

I made this and ate is as a pudding.. it was very good.. and could even be turned into a cheese

Hi there.
By "coconut butter", do you mean coconut oil? Or a product made of ground coconut meat - with or without some proportion of coconut oil? I've seen this term used both ways, and I find it very confusing.

I just tried a carrot cake recipe on here and loved the cake but not the icing. I think I will try this next time!
