Creamy Dreamy Dressing

Usually I have a vinaigrette style dressing, but I really wanted something creamy. Voila! Even my 13 year old, who gags at most things green, really enjoyed it. I tried to get a pic of the dressing on the salad I made, but it mostly just blended in with the greens. Oh well … it’s still a pretty pic, right. ;)
Ingredients:
1 cucumber
1 avocado
2 green onions
3 big handfuls of
cilantro
2 tablespoon honey
¼ cup lime juice
2 tablespoon cumin
water
Preparation:
Toss the first 4 ingredients into the blender with enough water to get things moving.
Then add the remaining ingredients & whiz until well blended.

For the salad I used some mixed baby greens, raw corn [cut from the cob], mango, avocado & a sprinkle of flax seeds. :)

Yes it's a prretty pic! I can still see the dressing and the salad looks delicious. I'm goig to try to find the recipe.
