Creamy Shiitake Soup
Rich, creamy & filling!
[I don’t believe soy sauce is raw, but I didn’t have any applicable substitutes.]
3 cup shiitake mushrooms
1 tablespoon olive oil
3 tablespoon soy sauce, [or applicable
substitute]
salt
pepper
1 cup nuts, soaked
2 stalks of celery
2 clove
garlic
1 handful of parsley
¼ cup lemon juice
water
I had dehydrated shiitakes. I soaked them in water to soften them. If you have fresh, then you get to skip this step! :)
Add mushrooms, olive oil, soy sauce [or applicable substitute], salt & pepper to a bowl. Mix to coat. Allow to marinate for several hours.
Add mushrooms [with about half a cup reserved for garnish] & rest of ingredients to the blender. Add water a little at a time to get mixture going & reach your preferred texture.
Chop reserved mushrooms.
Ladle soup into a bowl.
Garnish with topped mushrooms.
Sit.
Relax.
Enjoy.

Amazingly tasty and full of flavour ! Unfortunately I didn't have celery this time.
I used a mix of different nuts.

I made this tonight! My first raw soup and anything remotely like a main course besides salad! WOW, it's REALLY GOOD! I didn't have celery, but no matter...I added some chopped spring onions, leftover from making Zoe's cheese! I didn't have hours, so I tossed the shrooms in the dehydrator to marinate and warm up. Also added some of the chopped onions and a clove of garlic to that mess, and some dry summer savory leaf.
I used a mix of lemon and lime juice for the juicy bit and cashews for the nuts. I bet walnuts would be good too, they have the same kinda rich earthiness as shiitakes. I added a dash of savory, paprika, rosemary, and thyme to the juice in the blender, and more green onion when I blended everything down. I garnished with chopped green onions and served with a small slice of Zoe's Essene bread and spring onion cheese.
Delicious! Wish I could get the soup hotter, but it's a small price to pay. This made 2 hearty servings btw!
Has anyone tried this with any seeds yet? It's good with the cashews, I just don't want to even think about the fat content in the half cup of cashews I'm currently devouring!

Mon46, try some sunflower seeds or pumpkin seeds (latter might give a stronger taste), it should work fine or just leave out the nuts, you get a thinner soup and you may need to add more spices. The key to any mushroom dishes in my opinion is the ample use of freshly ground pepper.
