This is a hearty and satisfying vegetable soup that is made in a snap with your blender. We highly recommend garnishing it with chopped green onions, diced avocado and Rawmesan. Sure to satisify any apeitite and pallette.

1 medium organic red/yellow bell pepper (cored & chopped)
1 medium organic cucumber (chopped)
1 small organic zucchini (chopped)
1 stalk organic celery (chopped)
2 stalks organic green onion (chopped)
1 clove organic garlic
1 handful organic spinach leaves
8 organic cherry tomatoes
1 cup of water
2 tbsp organic lemon juice
1 tbsp nutritional flakes
1 tbsp organic olive oil
1 tsp organic coconut oil
1 tsp sea salt ()
Optional: 1/4 tsp organic cayenne
Garnish:
chopped green onion
diced avacado
chopped tomato

Place all ingredients (except garnish) in blender.
Blend at highest speed for 45 seconds.
To Warm Soup, blend a second and third time.
Serve in bowls and garnish with the green onion avacado, Rawmesan and chopped tomato.
This is a good recipe. I omitted nutritional flakes (not sure what they are), olive oil, and all the optional ingredients(did not have them on hand). The green onion flavor was very dominant in this recipe. Next time, I will add only 1 green onion to reduce the strong onion flavor. I will make it again.
MmmMmMM - this soup is sooooo good; worth all the ingredients! I used a leek like 'Sily' suggested (just because I didn't want to buy a big bunch of celery for one stalk) and added an extra garlic clove (because I'm a fan) and it was a bit oniony but still so delicious - the amount of salt you suggest is great, I didn't have to add any. Thank you for this one - I'll be putting it on my favs : )
I had everything in my fridge to make this (except for celery - ick), and green onion - I used some leek instead. It was Delicious! Thank you for this - definitely a keeper!!
My daughter and I had this for dinner last night and it was delicious. Sadly, my spinach had gone wonky and I had to leave that out, and being a chilehead I did toss in a small serrano pepper to add some heat. Very good....we will definitely make this one again!
