Serves 1Light refreshing cabbage with cucumber, carrot, jicama, pumpkin seeds, and almonds. Dressing is not necessary because there is so much flavour from the vegetables with a nice crunchy taste from the seeds. I am not one for lettuce, dressings, or salad, but I really enjoy this cabbage mixture. Enjoy!
Ingredients:
Cabbage, Finely Sliced
5 Cucumbers, Sliced Quarterly
½ Carrot, Peeled &
Sliced
¼ Jicama, Peeled & Sliced
sprinkle Raw Pumpkin Seeds
sprinkle Raw Almonds
Preparation:
Cut the amount of cabbage desired and finely slice. Cut cucumber slices. Peel and slice carrot and jicama. Toss with some raw almonds and pumpkin seeds.

Thank you! Jicama is tasty. I do not like sauces much, but I had it as a wrap which was nice. Thanks for the idea. Let me know how it tastes if you try it with the peanut sauce.

The sounds really good. It would be really good in a wrap with raw peanut sauce too.
