Servings:
6-8 servingsThis is a very flexible recipe. I came up with this today and loved it!
Ingredients:
1 sweet onion, chopped
1 zuchinni, chopped
1 cup carrot pulp
.33 cup
tahini
¼ cup cilantro
.33 cup ground flax seed
1 red bell pepper, chopped
1 cup sunflower seeds
sea salt, to
taste
1 teaspoon cayenne
1 lemon , juiced
garlic, to taste
2 tablespoon olive oil
Preparation:
Throw all ingredients in a food processer until well blended but still very chunky. Form into patties and dehydrate at 105 until your desired consistency or refrigerate for a few minutes before serving. I just slopped it right out of the food processor onto my sandwich. Great served with fresh tomato slices, sprouts, etc.

1.
i got a HUGE grocery bag full of carrot pulp from whole foods for free - came from their juicer.
i'm making these tonight...hope they taste as good as it seems.

needs a juicer, could probably grind them up in a food processor or use grated carrots.

How do I make carrot pulp? I would love to make these.

Yeah, the consistency is like a chunky NOTtuna. If you increase the zuchinni and carrots then you will prob have to increase the seasonings. Good luck!

This sounds really good. When you put it on your sandwich was it at all creamy, like a chunky pate? I especially like the idea of not dehydrating it. I am trying to minimize my fat intake as well as the amount of dehydrated food I eat. Do you think it would taste good if I decreased the sunflower seeds and increased the zucchini and carrots? I'm also thinking about using ground chia seeds instead of flax.
