Set sliced cucumber and washed watercress aside. Puree remaining ingredients in blender until creamy (I use a magic bullet – it ROCKS!) add filtered water if necessary but it should end up pretty thick. Let sit a bit for flavors to combine.

Spread lightly onto the cucumber diskettes and top with a few leaves of watercress and another cucumber diskette. (watch out! Watercress is SPICY)

Serve with herb tea and a thick British accent! Yum!
