Cukes and Kanayama Miso
I was craving this special type of miso that we used to eat in the summertime in Japan. It was a little sweet, with barley, and sometimes chopped veggies in it,and we would spread it on cucumbers.The miso by itself wasn’t substantial enough, so I just mixed in some nut meal (brazil nuts).
¼ cup nut meal leftover from nut milk recipe (or ground nuts)
1 teaspoon good quality red miso
1 dash black pepper
1. Slice cukes into circles, about half an inch thick.
2. Mix nut meal with miso and a dash of pepper.
3. Scoop mixture onto cucumber circles, and eat!
