Recipe Directions

1. Slice cukes into circles, about half an inch thick.

2. Mix nut meal with miso and a dash of pepper.

3. Scoop mixture onto cucumber circles, and eat!

I was craving this special type of miso that we used to eat in the summertime in Japan. It was a little sweet, with barley, and sometimes chopped veggies in it,and we would spread it on cucumbers.The miso by itself wasn’t substantial enough, so I just mixed in some nut meal (brazil nuts).

I just made this for the first time and they make nice little appetizers! I only had chick pea miso so I went heavy on that and the black pepper. Quick and easy!
