Curried Carrot Soup
A warm soup made in your high-speed blender - super easy and super yum!
4 carrots - washed and cut into 3" long pieces
1 stick celery
1.5 c. water (or more, depending on how thick you like it)
1/3 c. dried coconut
1 T. red miso
1 t. red curry paste or curry powder (or more to taste)
small chunk of ginger - peeled
garlic (to taste)
2 t. shoyu
2 t. agave (or other sweetener)
Sprouted beans or seeds
Place all soup ingredients into high speed blender. BLEND! Depending on how long you allow this to blend, it will warm up... more water can be added if needed, or to make a thinner soup.
Garnish with chopped tomatoes, sprouts, and a drizzle of olive oil. Would probably be great topped with chopped avocado too!
