Curried N'egg salad
Quick and easy with easy to find ingredients.
It’s shown here on a piece of cornbread from this site. It would be great on any bread, cracker or bed of greens.
2 carrots, roughly chopped
2 green onions, sliced
¼ yellow bell pepper, roughly chopped
few cilantro leaves
squeeze of lime juice
salt and pepper
1 teaspoon olive oil
½ teaspoon curry powder (probably more)
2 ribs of celery, diced
1. Process carrots, green onion, bell pepper and cilantro until very finely minced. If making by hand, grate and finely mince all of the above.
2. Add avocado, lime, salt, pepper, olive oil and curry powder. Pulse in food processor until nice and smooth. It will be thick and creamy. If making by hand, smash avocado and mix with above ingredients until thick and creamy. Taste to adjust seasonings, I like lots of curry.
3. Stir in celery, adding extra if needed to create an egg salad like texture.
4. Serve as desired or chill and serve.
