Curry Cauliflower Salad

Serves 3That wonderful curry flavor, in a salad. It’s great when you’re on a raw food diet, but craving Indian food!
Ingredients:
2½ cup cauliflower, chopped
½ onion, peeled and diced
1½ cup carrots,
grated
3 teaspoon tamari, or to taste
¼ cup raw tahini
1 teaspoon curry powder
¼ cup water
Preparation:
Place the prepared vegetables in a serving dish. In a cup mix together the water, tamari, tahini and curry powder. Pour the sauce over the vegetables and mix in well. Allow to marinate before serving.

I added diced tomatoes on top (and put in 2 teaspoons of "mild" curry powder)

I just prepped a bunch of cauli, carrots, red peppers, and onions yesterday--so I'd always have something semi-ready this week and this HIT THE SPOT!

This is amazing...its one of those gestalt type recipes where the whole is SOOO much better than the sum of itīs parts! I added about a fourth a cup of chopped cilantro, and itīs great, great, great! And cheap too, which I like a lot.

Mmm this was so yummy & simple & a great way to use up my cauliflower =). I don't have any carrots so i added some dried apricots. I also used a lot more curry powder & some lemon juice at basienka's suggestion - so yum!

I made this for lunch today it was so good. I add tomatoes and yellow bell pepper and make more of a sauce and eat it as rice and curry sauce. It the spot like nobody's business :) thanks Ray! :) dea

A wonderful salad! I modified it a bit by adding a bit of lime juice and a drizzle of flaxseed oil. Even my son who doesn't like raw food liked it :-)
