CURRY in A HURRY
I know it’s another kale salad but this one is perfect for anyone looking for a hearty meal to take to work or for after work when you need dinner on the table in a hurry. I make a batch and divide it in to three zip lock bags and let it marinate for three hungry people in my family. ” I will post a pic later or the next time I make this “
¼ cup Organic Olive Oil
¼ teaspoon Cayenne
¼ cup Agave
Nectar
1 teaspoon Curry
1 head Kale (I like Lactino for this one !)
¼ cup Raisins (unsulphured)
¼ cup Pine
Nuts
¼ cup Red & Yellow Bell Pepper
¼ cup Green Onion (or more to taste)
1 Avocado
Chiffonade kale into small ribbons and massage with juice of 1 whole organic lemon. Whisk the first four ingredients or if you can’t shake in a mason jar. Mix other ingredients into salad and let stand for 30 minutes.

2. I made a big batch of this
I made a big batch of this last night to bring into work today & tomorrow - just had it now and it was great!
I haven't eaten kale before and wasn't sure if I'd like it but the combination of flavours works really well in this salad.

Hi Ardesmond, this recipe looks good. What curry did you use? Can I use any curry? I love the taste of Avacado unfortunately my digestive system hates Avacado...wish they would just get along. Do you think I could substitute with a coconut oil and / or coconut milk?

I LOVE this recipe. I've made it about 4 times already. The contrasts of flavors and textures is an exciting balance. . It's like a curry meal with the chutney built in. It's now my favorite recipe on this site.

I never get tired of Kale either! Thank you for this recipe, I am going to try it soon! I am guessing you mean the juice of the lemon, not sliced, right?

I work Tues- Friday and this could be lunch for 3 of those days! Now that I'm back doing my hot yoga, I sometimes don't get home till 9pm and I'm always so darn tired making salads every single night for my lunch the next day. This would give me a break if made on a Monday night!
