Recipe Directions

CRUST

1. Pulse in blender or processor into fine crumbs.

2. Push into 9” inch pie pan or individual serving bowls.

3. Chill. Reserve some for the crumb topping.

FILLING

4. Melt coconut oil.

5. Stir in yacon with the ground cinnamon, and then the cacao powder, vanilla, and salt.

6. May have to re-warm before squishing filling onto the crust. I used twice as much cacao to cinnamon with less than a cup of oil. You want the filling tight but not hard.

7. Top with reserved crust crumbs and enjoy!

This one is wonderful! But use you own judgement on measurements.

As we all have our preferences, I use only yacon as it has a low glycemic index. The cinnamon stabilizes blood sugar and doesn’t really add any flavor.

I used the food processor instead of the blender for the crust and a mixing bowl for the filling.

As most of us do, I guessed at the measurements on the ingredient list.

Well...I tried this in a cupcake pan. I ended up having a lot of almond crumbles left over, even after the crumbly topping. Yeah, nut crusts take time and patience,, and they never really turn out like a perfect shell. They just fall apart. So I ended up having little cinnamon-y chocolate blobs coated with almond crumbles. I find that I can really taste the cinnamon. I must say, though they didn't turn out as expected, my little chocolate blobs were absolutely delicious. This is the first time I've used melted coconut oil to make such rich chocolate, but now I'm using it a lot more...very yummy. The chocolate is very rich, but the nutty coating milds that out. I also sprinkled some coconut as a topping.

I made this for a friends bday for a raw events tonight and everyone loved it. I used some coconut butter in my filling and used chocolate stevia because my friend can't have the sweeteners. But it was a big hit! Thanks!

OMG!!! I just noticed that the crust is missing some ingredients!!! No wonder you had trouble with it not holding together... I blended in a half cup coconut oil and some yacon with the almond crumbles... Also I use the cinnamon as a blood sugar stablizer and antioxidant, so it can be omitted or at least reduced.

Funny expression 'death by chocolate'!!

I'm glad you found something with chocolate you can eat. Making up 100% raw chocolate might be nice too with just mesquite to sweeten.
