I was inspired to create a this recipe after a discussion of this wonderful root in a forum discussion. Thanks for the challenge!
1 celeriac root, peeled and cubed
¼ cup sunflower seeds
1½ tablespoon olive oil
1 teaspoon coriander
¾ teaspoon salt
1 clove garlic (optional), chopped
Grind sunflower seeds in food processor until fine
Add 2 cups of cubed celeriac root and the remainder of ingredients. Process/grind until sufficiently “mashed”. Most likely, you will be able to make a second batch if you have a small food processor (like I do), as celeriac roots are pretty large. If you have a large FP, double the amounts of all ingredients and go!
