Ingredients
4 green onions, finely cut
1 cup red grapes, cut in half
2 teaspoon roughly crushed whole coriander seeds
2 tablespoon good walnut or olive oil
2 tablespoon umeboshi plum vinegar
1 tablespoon balsamic vinegar or apple cider vinegar
1 tablespoon raw honey, maple syrup, or organic evaporated cane juice
sun dried sea salt to taste
2 medium heads or 3 small heads endive
6 cilantro sprigs
1 cup walnuts, chopped
Recipe Directions
in a large bowl, toss onions, grapes, and crushed coriander with oil, vinegars, sweetener, and sea salt. separate endive leaves from the head. gently toss with cilantro sprigs, grape mixture, and green onions. serve on salad plates and sprinkle with walnuts. season with black pepper to taste
