Fresh Salsa

Our favorite salsa. It keeps well in the fridge, so I usually make a double or triple batch to keep everyone happy for a week at a time.
This is also really tasty if you add half a cup of this salsa to half an avocado and mash it all together. Serve with crackers/chips or veggie sticks.
PLEASE NOTE: I included this recipe in the Kids category, but it is not appropriate for children under one year.
Ingredients:
4 large organic tomatoes, washed and cut into chunks
1 carrot, peeled and sliced
1 jalapeno (or less, if you want milder
salsa)
½ cup fresh cilantro, washed and stems removed
¼ red onion, peeled
2 tablespoon fresh lime juice
1 clove garlic, peeled
Preparation:
Put all ingredients into food processor and process until combined. Keep in refrigerator.

I tried this tonight, though i had it over carrots & corn so i omitted the corn from the recipe & it was DELICIOUS! Might try ymi's variations next time =)

Hi,
I just made this, only I added 1 dade, some cumin, salt, 1/4 cellery stick & 1/4 bell pepper.
Delicious!!!
