2 cup coconut meat, 5-6 coconuts, meat works best with the gel consistency
1 cup coconut water
½ cup agave nectar
¼ cup cacao nibs
¼ teaspoon sea salt
With a coffee grinder, ground cacao nibs into powder. You should have about 1/2 cup cacao powder.
Liquify all ingredients in a blender. Pour mixture into 4 oz popcicle molds. Leave about ½-inch space at the top to allow for expansion.
Put in the freezer for 6 hours. Overnight is best.
No way! This recipe was SO UNBELIEVABLY delicious!! I am speechless... Thank you so much for posting it! I froze mine in ice cube trays with plastic wrap over the top to hold in tooth picks I used for the sticks. It worked great. Thanks again! And yes, your daughter is beautiful! Very cute picture!
The flesh from a young coconut, after you drink all the water, you can scrap it out with a spoon, should be easy, some older ones you have to apply some pressure.
I love to put the water and cocomeat into a blender with 1 packet of stevia and alittle nutmeg and have it for breakfast.
I would love to make these, but (at the risk of sounding innocently ignorant), what is coconut meat exactly?
Thank you all for your wonderful comments. You've made my daughter giddy!
i agree with ray: cutness personified! i have to get some popsicle holders!!!
That's a great idea! Say Hi to your daughter from the raw site and especially my new puppies..=)
These sound fantastic! I'll be picking up so I can make these. I've been looking for a recipe for raw fudgesicles and I'm not great at coming up with raw recipes on my own, so thanks for sharing it! Your daughter is beautiful, by the way. :)
That's gotta be the cutest recipe photo yet!!
