German Chocolate Ice Cream

Serves 2This is the first raw dessert recipe I’ve created! I started with an existing recipe for Easy Chocolate Pudding on this site. This is better than the German-chokolatekakeŽ ice cream I used to get at Cold Stone, and so much better for me!
Ingredients:
1 avocado
½ teaspoon alcohol-free vanilla
1 tablespoon raw cacao, add more to taste, but a little goes a long
way
2 tablespoon virgin coconut oil
2 tablespoon raw agave syrup
8 dates, pitted, add more to taste
¼ cup raw walnuts or pecans,
chopped
1 tablespoon shredded coconut
Preparation:
Process all ingredients, except nuts and coconuts, until smooth. Stir in nuts and coconuts. Freeze in 2 small bowls until solid. Drizzle with raw agave syrup. Enjoy!

I saw on another recipe someone wanted a recipe without avacado and they said peas. Couldnt you sub out here for those who have that rare avacado allergy or are looking for a cheaper ingredient.

This is amazing ice cream, the best I've ever had! For 2 servings, I used 3-4 Black Mission figs, reduced the agave to 1T + 1t, doubled the cacao, and quadrupled the dried coconut (I'm a coconut fiend). Next time, I will try to double the amount of figs (for more texture), reduce the agave to 1T, and also mix in by hand about 2T of cacao nibs to make it German Chocolate Chocolate Chip Ice Cream. The pudding makes the most wonderful ice cream, doesn't it? I'm going to put up my version one of these days, but try throwing a food-processed apple in - it does good things for the flavor and texture.

Great 1st dessert recipe! Anything sweet involving Avocado sounds good to me..I will definitely try this.
