Graham Cracker Crust

Makes 2+ cupsThis is not actually a graham cracker crust. Because, as you may know, graham crackers are not raw…
But it is a very close imitation when used for cool things like cheesecake and fake samoas. Oh yeah!
Ingredients:
2 cup almonds, NOT soaked
15 medjool dates
½ teaspoon sea salt
1
teaspoon vanilla
¼ cup orange, lemon, or lime juice, optional
zest of orange, lemon, or lime, optional
Preparation:
Place the almonds in your food processor and process until the almonds resemble graham cracker crumbs. This took me about 3 minutes.
Add the dates, salt, and vanilla and optional zest and process until the mixture comes together (about 2 minutes or less).
Press into the bottom and up the sides of a springform pan.
