Grandma's Potato Salad

Servings:
1 cup (more or less)Potato salad almost as good as grandma’s!
Ingredients:
1 juice of 1 lemon
1 cup water
1 clove garlic
1 teaspoon
salt
1 cup cashews
1 tablespoon dry mustard
1 tablespoon vinegar
1 stalk of celery, chopped finely
1 cup
cauliflower, chopped
1 green onion, chopped
Preparation:
Blend water, lemon, garlic, salt, and cashews until smooth. Stir in mustard and vinegar. Add in cauliflower and onion and stir until combined. Refrigerate at least 1 hour to allow the flavors to combine.

I am really thanking you right now for this recipe. After adding our family's extra's it really does taste like a crunchier version of Grandma's! I imagine this will be up there on raw comfort food list. I have enough "mayo" to make a couple more servings.

AND, I put some chilli powder and an extra garlic clove in it. Being an indian 'west indian' I'm used to really spicy food, so the pepper really kicked it up. HMMMM maybe I can try some curry marsala powder in it next time.

Oh wow, finally a recipe that wasn't too bland. I loved it. I didn't put as much water nor as much lime juice and no vinegar in it,but it was nice and thick and tasted great. To add a bit of variety I finely diced a date and put some dried cranberries with the cauliflower. MMMMMMMM. I am making some tomorrow for lunch to take to work.

I've just made this, and it is delicious. The only thing I would say is that the 'sauce' was very thin. It's probably meant to be thin, but to make it more 'potato salad-y', I doubled the amounts of cashews, cauliflower and onion. Or you could of course just halve the amount of water. But tasted really good and will definitely be making again.
