green papaya thai salad
this is my version of a traditional thai green papaya salad
i always get alot of raves with this dish for potlucks,it’s an easy prep as long as you have all the ingredients.tweak it as
you wish to personalize it as this is just a guide.you may use sea salt instead of nama shoyu…it depends on how dogmatic you are.
2 cup green papaya, shreded in food processor (found in most asian markets,bigger grocery stores)
1 lime
10 green beans,
julienned,or shredded
10 cherry tomatoes, halfed or quartered
2 clove garlic, minced
½ tablespoon sesame seeds
1 chili pepper or more if you like
it hot, chopped fine
1 tablespoon fresh cilantro (optional,i love cilantro), pick off whole leaves
2 tablespoon shredded carrots if desired for color
2½ tablespoon dark agave
nectar
1 tablespoon nama shoyu or sea salt
shred papaya and carrot.set aside.
in a separate bowl add tomatoes,garlic and green beans and crush together gently.add lime juice,dark agave nectar,nana shoyu/sea salt,chili pepper.mix
well.
combine all ingreients together about 1/2 hour before ready to serve.add cilantro last.

i brought this to a potluck tonight...everyone asked "what are the noodles made of?"
i think green papaya could be taken to a whole other level in raw foods....stay tuned...i will be experimenting.
