Makes 1.5 cupsSeriously good cheese, I promise :) Great on pizza.
Nutritional yeast is not technically raw but many raw foodists choose to use it. I’m sure this would still be good without it.
Best at room temperature or warmed in a dehydrator.
Ingredients:
½ cup pignoli
¼ cup hemp seeds
¼ cup sunflower
seeds
1 clove garlic
¼ onion
1 lemon, juiced
4 tablespoon nutritional yeast
3 tablespoon
oregano
2 tablespoon hemp oil
1 sun-dried tomato, chopped
1 teaspoon sea salt
1 small red pepper, chopped
Preparation:
Whiz all ingredients in a blender or food processor until smooth. Use as a cheesy spread or dip or spread thinly on a teflex sheet and dehydrate into slices.

It's so yummy! I used it with poemom's pizza crust and sausage with a little red pepper stripped on top. So good! I've been trying different cheese combinations and didn't find anything that appealed to me until now, this is awesome! thank you so much! The only thing I changed was to use grapeseed oil instead of hemp oil (didn't have any) but other than that I stuck to the recipe. I think it would be really good with veges mixed in, like some chopped tomato and pepper, and then used as a dip with chips or crackers, veges, whatever! Yummy yummy!

I used only sunflower seeds (soaked - probably 1 1/2 cups before soaking). This cheese IS fantastic! Also, didn't have any sun-dried tomato or red pepper, so I just skipped it and then threw 1/2 of a jalapeno in there too.
I thought the 3 T. of oregano would be too much but, I went ahead and put it in anyway. So glad I did. It's yummy!

I'm sure you could sub cashews, brazils, macadamias or adding more hemp seeds or sunflower seeds.

I'm not a big fan of pine nuts, has anyone substituted another type of nut with success?

pignoli is pine nuts. you gotta hunt around to find them affordable, though...

I didn't soak the seeds properly because I didn't plan ahead, so they were soaked for about half an hour. I don't think it really matters, either soak or just add some water while processing.

This is fantastic.
I didn't soak any of the seeds, but I think I could have, as I had to add water to get the cheese to process. Maybe the author can comment?
