Incredible Mushroom Soup!
This is very rich and super good! It’s looks are deceiving! I made a smaller portion at first just playing around with leftovers and both me and my boyfriend had a “ommagawd” reaction so I tried to get it again and write down portions. Feel free to start with smaller amounts of spices and adjust up.
8 ounce fresh crimini mushrooms, soaked in shoyu for about an hour then drained
½ yellow onion
1 clove
garlic
½ small avocado
1 cup water
1 teaspoon dried thyme, or 2 fresh
1 teaspoon dried rosemary, grind or finely chop if dried (or use 2 tsp
fresh)
2 tablespoon shoyu
fresh ground pepper to taste
Cut up the mushrooms into quarters and soak for a while (an hour?)in shoyu; drain (I drain right back into the shoyu bottle) OR you can do what lzhpt did and use kelp, water and coconut oil (check out her comment on my carrot soup recipe!) Then put everything in a food processor or a good blender and have at it till smooth. Like I said in the description, it’s best to adjust it to YOUR liking, but these flavors are fantastic together!
Oh, and FYI – the soup will get darker the longer you have it because the mushrooms oxidize (like apples or avocado…maybe it is the avocado-who knows?!) Just know it is ok.

AWESOME! I just made this--soooooo fast and easy!
I didn't soak the mushrooms because I didn't have time--next time I will do that because I can tell it will make a difference. I also garnished mine with chopped tomato, onion and avocado. Oh! And I added about 2 tbl. of nutritional yeast--it adds a really nice additional creaminess!

This is a very heart little soup! Easy to make and a nice filling side dish for my dinner tonight. I didn't soak the mushrooms, just rolled them around in the shoyu, strained, and put a few spoonfuls of the liquid in. I also added a little bit of tomato before blending. Garnished with bits of avocado and mushrooms. Also added a bit of rosemary oil for more spice. Yum!

i am so happy i made this!!! i was nervous because of the raw mushrooms (have never been a fan), but this was very pleasant. i didn't soak my mushrooms- just threw them right in the blender. i had to use poultry seasoning in place of the rosemary and thyme (i used 1.5 tsp). i garnished it with chopped onion, tomatoes, and chives. thanks for such a great recipe!!

I'm eating this right now. So simple and so good, thank you! I don't like nama shoyu so I used a small amount of olive oil and raw apple cider vinegar and it turned out great.

Ohhh, this was soooo wonderful. Made it last night, even my bf liked it! I used double the water, though, and added lime (juice of about 1/3 lg lime) to help out against oxidizing. I tasted it before and after the lime was added, and it think it was a good addition flavor-wise too! YUM! Thanks!
