Israeli Avocado Salad
I got this recipe from an Israeli cookbook. They make some KILLER salads! :D
1 persimmon, peeled and diced
1 papaya, peeled, seeded, and diced
1 long cucumber,
diced
1 grapefruit, peeled, seeded, and diced
1 orange, peeled and diced
2 lemons, juiced
1 clove garlic, finely minced or
pressed
1 tablespoon raw honey or agave
½ teaspoon sea salt, (to taste)
pepper, (to taste)
4 tablespoon olive
oil
1 avocado, diced (just before serving)
½ head radicchio
Put papaya, persimmon, cucumber, grapefruit, and orange in a large bowl.
In a small bowl, whisk together lemon juice, honey, garlic, salt and pepper. Slowly whisk in olive oil, taste, and
adjust seasonings. Pour over fruits. (this can be done hours in advance – just refrigerate it to let the flavors marinate)
When you’re ready to serve, cut up the avocado and gently toss into salad using your hands. Spoon onto plated radicchio leaves and serve!
