Jicama Salad

Serves 6 (as a side)Jicama is fantastic all alone – in this salad, it is something quite special.
Ingredients:
1½ cup jicama, peeled and cubed
1 large cucumber, sliced
1 orange, peeled and
cubed
2 tablespoon fresh lemon juice
¾ chili powder
celtic sea salt, to taste
Preparation:
- Combine jicama, cucumuber and orange.
- Toss in the chili powder and fresh lemon juice.
- Cover and place in refrigerator for at least 2 hours.
- Before serving, add Celtic sea salt.
