The wilted kale and avocado salad from The Raw Chef is one of my favorites, but tomatoes have gone out of season here and avocados are pricey. Looking for a way to tame the flavor of kale, I topped the salad with Ani Phyo’s curry dressing and the result was really delicious.

Recipe Directions

Remove the ribs from the kale and tear into small pieces. Massage 2 teaspoons of salt into the leaves until they feel soft and wilted. Top the kale with your choice of seeds, the chopped green onion, the cucumber, and the dressing.

To make Ani’s dressing place the curry powder, apple, garlic, ginger, olive oil, lemon juice, and 1/2 teaspoon of salt in the blender and blend until smooth.

this sort of reminds me of a marinated greens recipe i have. you massage kale and add avocado, lemon, nama shoyu, and minced garlic. but i can't wait to try this one!

bluedolphin- i actually prefer the warm water method for greens. i put my greens in a colander and run semi-hot water over them a few times. but i never thought to soak in salt. that might work even better.

Do you have any experience with simply putting the Kale in a salt water bath and letting it sit while making the rest of the recipe? Does it give the same "cooked" results as rubbing the salt into the Kale? This recipe looks really yummy and a good way to make raw Kale edible.

I made this last night. I added some currants. I thought this made it even better. Currants always go well with a tangy curry sauce and adds a touch of sweetness about the apple in the sauce. Very yummy.

Thanks guys. I'll try the salt water bath tonight. When I was growing up I was taught to never let greens just sit in water because nutrients might leak out. That might not be the case with salt water. I'll see.
