key lime madness
this is a perfect pie for the hot summer, cool and crisp!
crust
3 cup almonds
4 or 5 dates
2 tablespoon coconut
oil
pinch salt
key lime filling
2 avacados
1 banana
1 an 1/4th cup lime or keylime
juice
½ cup mango (optional)
½ cup agave nectar
.33 cup coconut oil
crust
1. blend all the ingredients for the crust in food prossesor till mixture comes together , its best to start with the almonds and pulse till its like
power
2.rub pie pan with a little oil to keep from sticking
3. press mix into the pie pan, just like a gram cracker crust
key lime filling
1.blend all ingredients for filling till
smooth
2. poor in pie crust
3. place in freezer for 4 hours or longer ( i you put it in the freezer overnight make sure you put it in the frig to thaw a hour or two before serving )
WARNING!!!.... its hard to stop eating once you have had one bite, make sure you prepare enough (:

I made this for our wedding anniversary dessert, it was lovely although maybe too much almonds, plus i stupidy read the amount of lime juice wrong - duh!

Quiora-- I just made it and it was a bit too much lime juice. I would recommend either using more banana or less lime, possibly both. But this is coming from someone who likes things SUPER sweet.
But even so, this is soooooooooo good! Probably the best raw thing I have made thus far. I thought I was going to eat all of the batter before it even got to the pie tin!

Stupid question...is that supposed to be one and 1/4 cups of lime juice? It sounds like a lot, but if that's right, I'll take your word for it. ;)

I made this recipe for my cousin's 17th B-day (she's a very conventional eater...) and she absolutely loved it! I froze the rest and shared it with my non-vegetarian and non-health conscious family with great response, hannah rules! lol

O yeah I used walnuts instead of almonds since they are "really raw" so I figured might as well. Also used raw honey instead of agave but used less because it's so strong.

I made this a month or two ago when I saw it on another site.
Amazing! Go out and make this one. I want it again so bad but I don't feel like the mess of a serious recipe like this. SAD people would even like it, I think.

just a standard pie pan is best to use (9" ,i think thats standard) lol thanks for the comments. i have been making raw food like crazy.... its pritty much my favorite thing to do in my free time, so i will post more recipes soon
