Lemon Cookies

Servings:
Makes 12 small cookiesTart, chewy lemon macaroons. I’d recommend at least doubling this recipe, as the cookies are addictive and go quite fast!
Ingredients:
1 cup cashews, soaked for 4 hours
zest of 1 lemon
½ cup fresh lemon juice, (approximately 2
lemons)
1 cup dry shredded coconut
¼ cup agave
Preparation:
- Process cashews in food processor until they are pasty in consistency.
- Mix in all other ingredients.
- Place 1 tablespoon cookie dollops on a dehydrator sheet.
- Dehydrate for approximately 12 hours at 105F (could also dehydrate at 115F for 8-10 hours with similar result).
- Enjoy!

Yum! I just added a pinch of salt to balance out the sweetness and some almond pulp that was sitting in my freezer. I I love the flavor and found it less of a mess than other raw cookie recipes

I just wanted to follow up on the last comment I posted. I have since made 3 batches. 2 with organic almonds and 1 batch with raw organic cashews. I have to say that personally I prefer the Almond ones much better. There were much more moist and yeilded several more cookies than the cashwes. They were supper yummy and I love them!! I will be giving them away for Christmas. Thanks again!!!

Smart, Healthy, Super Yummy cookie. I too have trippled the batch.I do not happen to be vegan, but my wonderful neighbor and friend is. She made this cookies a few days ago and I swear I am finding excuses to go to her house to have more!!! They are so good! So I went out today and got the Cashews to make my own. I however already had slivered Organic Almonds at home. I soaked them and made them first. They are still in my dehydrater as we speak. I justed asumed these could be made with a different type of similar nut. But just in case, the cashews are soaking right now for tomorrow. Again, thanks for the wonderful recipe that will be shared for years to come! Also, I added just a bit of raw honey comb.

Hmm, Irish Moss is a good idea for that texture of a SAD lemon bar.

Oooo, lemon bar version? Post the recipe when you're done. I think I would try my lemon bar version with more coconut (for the filling) and Irish Moss for texture.

These are definitely a keeper. Good advice to double, triple, quadruple the batches. They are always SAD eater approved by co-workers and friends. I think next time, I will make an almond crust and press dough on top to make a lemon bar version.

I absolutely love these cookies! I just made five times the amount of what is used in this recipe because every time I put them in the dehydrator I always snack on them before they're even done! By the time they're done they're nearly all gone! Ha, so now I made a really huge batch! ;-)

I made these with almonds and they were DELICIOUS!!! I didn´t make a double batch, and that is my only regret...mos def on the make again and often list!!

WOW! I can tell these will be delicious - it's amazing I got the dough into the dehydrator without eating it ALL! Anyway... 2 lemons wasn't nearly enough, FYI. I buy my lemons at Trader Joe's, and they are rather small. I am sure 5 would have been more like it! I didn't have enough as a result, and used orange juice to make up the difference. The result tastes delicious... no complaints! Can't wait to eat these cookies! I am not sure I'll be able to leave any for DD!

I am going to soak cashews and make these and post a picture on the thread kandace started! I made them once, but they spoiled in the dehydrator and now I have a brand new excalibur that won't spoil! Yes! I will of course let you know how they come out. :)
