Lemon Pudding

Makes a heavenly lemon pudding! Also can be used as filling for a pie
Ingredients:
2 cup mashed avacado
1½ cup lemon flesh
1 lemon, juice of
2 cup
pitted dates
4 tablespoon honey or other sweetener
Preparation:
Blend all ingredients until pudding-like texture forms. Add more or less sweetener to taste. Enjoy

I just made it and it is DELICIOUS! So yummy! I was going to make pie- but instead I am eating my pudding with crust on top. So scrumptious!

bananas could also work if you prefer, but avo is delicious for making pudding

I love avocado and bananas together and this recipe appeals to me as well. I saved it in my recipe box!

I have a friend from Brazil & she says avocado milk shakes are very good and common fare there. I tried and did not like. Sugar, milk, & avo blended.

looks great! actually shgadwa avocados are great in dessert, especially in combination with raw chocolate and dates.

Wouldn't bananas work better? Besides them being cheaper, they are sweeter and I could be wrong but I always saw bananas as fruit and dessert and avocados as dinner and snack and lunch etc.

I had to abandon the MC a few weeks ago due to serious caffeine withdrawl headaches (not too proud of that) I was left with lemons and maple syrup and followed a very similar recipe like the one above from Alissa Cohen's book. She didn't use a sweetner and I thought it needed something, so I added maple syrup. And my pudding was very good, yet slightly tart which was fine. So if you like lemons, try this recipe :-)
