A simple dish that doesnt require any fancy equipment.
2 Yellow Squash, cut into shoestrings
2 Roma Tomatoes, roughly chopped
1 Lemon, zest and juice
Salt and Pepper , to taste
Toss and enjoy.
I had this for lunch and it was great I also put cilantro in it. Yummy
Rebe, thank you for this simple, yet satisfying recipe. This evening I was in hurry, so I just put all the ingredients in my VitaMix. It made a lovely creamed soup. I did add a little fresh cilantro. "Delish!"

This looks like a dish I get at a Thai restaurant sometimes... it's just lemon juice over rice noodles with fresh tomatoes. Very yummy - and this one is even better for me since there's no noodles!
