Mint Chocolate Chip Ice Cream
Creamy, Cold, and Delicious!
3 Frozen Bananas
12 Large Mint Leaves (1 - 1.5 inch long)
12 Raw Cacao Beans
2½ tablespoon Maple Syrup
¼ cup water
Begin by placing the cacao beans, mint leaves, maple syrup and water in the vitamix then place the bananas on top of all the other ingredients in the vitamix. Start on low speed and increase as the beans get chopped and the bananas break down. Blend until the mixture is creamy with no chunks and small flecks of the cacao.
Pour into a bowl and enjoy straight away or place in the freezer for a little bit.
Note: If you don’t have cacoa beans you can use raw cacoa powder – this will change the color to a chocolate color, but it still tastes good. Another option is to take half of a green and blacks dark chocolate bar (85%) and throw it in.
Another Note: Be sure to use ripe bananas with no green when freezing them. Bananas that are even the least bit green have a binding effect in the body, whereas ripe bananas pass right through!

mmmorgans..yes that is true they can be a bit bitter. Try grinding them up first in a coffee blender or something to get more of a powder and add more sweetener. I like them as nice flecks cuz I think it gives a nice essence. If you don't like them or it is too much work to grind them up you can try the raw cacao powder, which works well also! Good Luck!

That sounds delicious, although I find cacao nibs to be very bitter and not very chocolatey, does it taste more like chocolate when they are ground up?
