My Favorite Salad

Servings:
1-2The most lovely, delicious summer salad ever! Great to eat while the tomatoes are glorious!!
Ingredients:
1-2 Large Tomatoes, heirloom are great!, cut into large chunks
¼ English Cucumber, peeled and sliced thin
¼ cup Red onion, thinly sliced
1 Good handful fresh basil, julienned
½ Avocado, seeded and cut into chunks
1 tablespoon EVOO---rough estimate on quantity, suit to your liking. Should just
coat not drip!
salt & pepper, to taste
Preparation:
The quantities are all guesstimated so use your judgement. If you like less cuc’s, use less or more tomatoes, use more! The olive oil is used just help mingle the flavors all together, not like a dressing. I hope you like it as much as I do!!

Sounds like one I make, I also add roasted beets and olives

yeah, it was kind of small but I ate it (1/2) as a side. I think the avocadoes added give it more sustenance, but I know a BIG salad is great as well!

Looks good.... Its a smallish salad though. I eat BIG salads.
