Servings:
Serves 2I have been trying for some time to not eat as many nuts and seeds and eat more greens….so far so good. This recipe came to me when I noticed that I was growing lots of basil in my garden!
Ingredients:
Big Handful of fresh Basil
1/4 cup of Olive oil
clove of fresh garlic
1/2 tbsp of lemon juice
half of big green zuchinni
1 tsp of celtic salt
1 tbsp of nutritional yeast
Preparation:
Chop zuchinni in cubes.
Throw all the ingredients, plus zuchinni in a food processor and blend until slightly chunky and smooth.
Make a lettuce wrap with romaine lettuce and dip celery in it.
I hope you enjoy it as much as i did!

I made this pesto using bunches of basil, cilantro and parsley. Very tasty and useful when you have all those herbs to use up. I am also going to freeze tablespoons of the pesto in the ice cube tray to keep it fresh longer. Then you just need to pop one cube out and let it thaw for an individual recipe for one. Use several for a larger recipe.

I think if you left out the yeast it wouldn't make that much of a taste difference. It may taste a little less "cheesy." But definitely post your results!

I like adding spinach to pesto, it keeps it really green and can really stretch the recipe (ooo and it's tasty)

Hey this sounds really good plus I can actually make it!! except what would happen if I left out the yeast cause we don't have any natural/organic yeast in Kurdistan? maybe I'll try it and post the results...
