Recipe Directions

1. Grind the seeds, nuts, and coconut to a fine meal in a food processor.

2. With the food processor still running, add the figs and then the raisins. The mixture should form a ball. If it does not, add more raisins and a few tablespoons of water, apple juice, almond milk, or the water used to soak the dried figs. The mixture should not be wet, but instead chewy like a paste and still rough.

3. On a plate, pour about 1 cup of coconut.

4. Wet your hands a bit (not too wet) and form balls with your hands.

5. Roll the balls on the shredded coconut.

6. Place the coated balls on a plate and dust with cinnamon powder.

Nutty, fruity, chewy-moist, light snack balls coated with shredded coconut.

They are perfect as snacks but also for a late breakfast or as an addition to a fruit plate. They could be eaten right away, stored in the refrigerator for three days, or in the freezer.

yes, dried dates or fresh ones, but ripe, will work perfectly. You could use fresh figs but you will have to adjust the recipe as fresh figs will add moisture and water to it. they will then turn out to be to wet and not firm. you could add more seeds or coconut if using fresh figs. I am glad you liked them.

I used soaked dried cranberries instead of the figs, and it was pretty good. The cinnamon would complement figs better, but I used what I had.

Also, I ground the coconut first and the consistency was even throughout. Great recipe!

i didnt have pine nuts so i used some macadamias instead.. and i added a few cranberries (inspiration from above comment). these little guys are really good!! i made them for a little get together im having tomorrow night.. everyone will love them, im sure, if they last that long!! :)

Can this be made using fresh raw coconut shredded instead of dried shredded coconut?

YUM!!! These were great! Very satisfying but not too sweet. I used dates instead of dried figs and they worked beautifully.
