Recipe Directions

1. Put all ingredients, except ice, into a blender and blend until creamy.

2. Then add the tray of ice cubes and blend again until all the ice is blended in well.

This sounds really yummy and my style, simple. Ardesmond2, I know that fruit frozen is raw as it doesn't take well to being blanched. Not sure about coconuts, but it seems to me that it wouldn't survive blanching either. Didn't know you could buy it frozen, will have to look for it.

Chris S, I was thinking of coconut water ice cubes, oj would work, too - good idea! The only coconut meat & water I have seen already scooped out is pasteurized & has sugar added - it is not frozen. Thanks for the info.

Super yummy!! The coconut just adds sweetness & richness, the thicker the coconut meat is, the more you taste a traditional coconut flavor. It is really good either way :)

chakra essence - Thanks! What are cara cara oranges? I forgot to mention that you may not need the agave if your oranges & coconut are sweet enough - all my recipes are usually extra sweet because I have a six-year-old I am trying to keep happy & healthy.

Chris S - There is already a lot of flavor, but let me know if you try it.

I just made this without the agave and with vanilla beans instead of extract...Holy cow! It was amazing!! I also used cara cara oranges, wowsers! Thanks for the recipe!!

Sorry I should have been more descriptive. The coconut water and meat are scooped out and and then frozen. Not sure how much processing goes into this, but I reckon its better then using the dipped ones.

I haven't ever seen Thai coconuts frozen - the frozen ones aren't dipped & the fresh ones are? It seems like the inside would be protected; I don't know anything about it.

LOL me to rawclaire so fun fresh and simple. I buy my coconut frozen as the farmers market has the fresh ones that were dipped in formaldehyde EWWWWW. Wondering if anyone else does this ?????
