I’ve tried other mashed potato-ish recipes before, but this is the first that made my taste buds sing. Thanks to chef Bruce Horowitz who created this delight and kindly allowed me to post it here.
Shown with the chickpea/miso gravy and pepper.
2 cup parsnip, washed and cubed
½ cup pine nuts
1½ cup water
.33 cup lemon juice
2 clove garlic, minced - or more to taste
1 teaspoon sea salt, or to taste
1 teaspoon olive oil
Serves 6-8? I ate all of it in one sitting! I loved it! LOVED IT! Next time I will double the recipe, and reduce the water just a smidge.
Sorry to be a downer here but I thought this was the most horrible raw food recipe I have yet tried. You might like this recipe if you are looking for pungent mashed potatoes with a hint of "old sock" and a sour after taste.
arrgh I'm from Australia so I got confused with the .33 measurement but my God yumm. I know I'll get the lemon right next time.
these definitely tasted a little funky. i followed the recipe, too. it tasted like hummus a bit- that's what my family thought, too. the parsnip's spicy flavor is just too off to be compared to mashed potatoes. i guess i have yet to find a contender for real mashed potatoes : /

It's a bit runny unlike normal mash but the taste is amazing, I would have never guessed!! And I don't even miss the warmth!! this is soo gonna be my winter comfort food! Next time I think a little more salt to make it extra savory ^^ Oh thankyou so much for posting this recepie, it saved my long, hard, cold day!!

Brilliant!! The best raw mash recipe I've tried. I had it with Matt Amsden's mushroom gravy, which is also good. (recipe on this site as well as p.65 of his Rawvolution book).
I tried posting on forums about your recipe but was unsuccessful. Kandace, you rock! We just had this for Thanksgiving and my SAD husband had 3 servings! I think we may have turned a "raw" corner because of you. Thanks so much--what a great recipe.
Can this be made one day ahead of time, or does it need to be made just before eating? Thanks!
Jicama is good also used this way. I always process vegetable first then mush it and squeeze it to get out all the liquid so you don't end up with a "smoothie". I always preferred a "stiffer" mashed "potato". Nutritional yeast is good in here too.

I'd probably just cut back on the lemon juice, period. I prefer my "potatoes" not to be tangy. Other than that, it totally hit the spot.
I made this for the first time for a "raw food" pot-luck and, well, by the time I was ready to leave about 80% of it was gone. Wonderful! O', if your going to make a double amount be sure to ease back on the lemon juice and add more parsnip. Cheers.
Growing up mashed potatoes were always a comfort food for me (when I was younger I was convinced that I could live off of mashed potatoes alone). So when I discovered your recipe I was excited not to have to lose that 'oh so familiar' taste. And I have to say now, they really do taste better than mashed potatoes. My taste buds sincerely thank you.

Had this last night....it was great....I didn't cook it but I did make it warm...I'm okay with almost everything being raw, I'm just not enthused about everything being cold.....anyway, I loved this recipe!!!
This was delicious and so easy! I drizzled mine (ok, more like soaked) in flaxseed oil, and it tasted like mashed potatoes with melted butter to me. Great recipe!

I made this dish yesterday for Easter and it was soooo good! Very tasty and really easy to make! :)
This was really, really good. While you still may not mistake them for mashed potatoes, the recipe is very tasty, the best of its kind for sure!
