Pepper Boat
These are cute little pepper boats filled with yummy goodness. Makes a great side or appetizer.
Cauliflower Bites:
1 C cauliflower, chopped in big chunks
1/2 t cumin
1/2 t
cayenne (or less if you fear spice)
1/2 T Olive oil
Greens:
1 C Turnip Greens, chopped
1 C Baby Kale, chopped
3 Cloves
garlic
1 T Nama Shoyu
1 T Olive Oil
1/2 T lemon juice
salt and pepper
Topping:
1/2 C cashews
1 T Nama Shoyu
1/2 T Olive
Oil
pepper
12 cherry tomatoes, sliced
2 peppers, halved lengthwise and seeded

Toss cauliflower with spices and oil and set aside. Mix Greens ingredients together in bowl by hand, massaging the leaves for a minute. Set aside. Make topping by processing cashews, oil, nama shoyu and pepper in food processor until crumbly texture achieved (use pulse because too long in the processor will make cashew butter). Lay out peppers and fill 1/2 way with greens. Put on the cauliflower, then the cashew topping, followed by tomato, then shake some Nama Shoyu over it. Let sit 10 minutes (or overnight to really suck up the flavor). Add a cheeze sauce or dressing or whatever you like (or not) and enjoy!
