Pico de galo
New to the raw diet, but I've been loving this.
I like it on romaine or with avocados, or alone.
5 small tomatoes
1 small white onion
1 bunch of cilantro
4 garlic cloves
lemon or lime juice (optional)
chili flakes (optional)
Finely dice everything, add salt, pepper and chili flakes if you like it spicy.
Refrigerate for a few hours to let the flavours blend.
Top with lemon or lime juice before serving if desired.
