1. Soak the pistachios for about 4 hours and dates for about 5 hours or until they begin to fall apart in the water.

2. Place all the ingredients in a blender or food processor, if you want it chunky. Use the soak water from the dates to thin it out if you want.

Was the texture close to dairy ice cream? I've made cashew ice cream (using ice cream maker) and it turned out wonderfully. Now I'm looking to do something similar but with all the pistachios I have. Is this the recipe for me? :)

Pistachios ... yummy. I haven't had them in a while. I used to love pistachio pudding and ice cream. I have to try this.
