You wouldn’t believe how good raw potatoes could taste until you prepared them. These cakes are soft and fluffy on the inside and crispy on the outside with a buttery flavor. Enjoy and experiment with onions and herbs such as basil.

Recipe Directions

1. Using a grater, grate the potatoes over a bowl.

2. Mix the grated potatoes with the vinegar, and let it sit at room temperature for at least 12 hours. This is an important step as it removes the starches from the potato and concentrates the flavor. The final product doesn’t really have a vinegar flavor, but the vinegar adds a mild sweetness and flavor.

3. After 12 hours, drain the vinegar off (you can reserve it to soak more potatoes) and mix in the salt and olive oil (use more or less to suit your tastes).

4. Spread the potato mix in little 4-inch diameter cakes on mesh dehydrator sheets. Dry them for 1-3 hours until the cakes are soft in the middle and dry and crispy on the outside.

Annabelle, oh yes, you could make really good chips with sweet potatoes too. Just use water instead of vinegar as the flavors probably won't mix well. Raw sweet potato cakes sound great to me.

wow, I'm soaking the potatoes right now, I'm so curious about how they'll turn out! I tried raw potato chips a while ago and loved the taste but not the consistency, so I really hope this will be great!

These look awesome! I'm going to try them with fresh sage, thyme, rosemary and black pepper for thanksgiving. I'll let you know how they turn out.

So, I just put these in the dehydrator, but even though I doubled this recipe, I ended up coming up with only about 18 little 4 inch patties.

Not sure where I went wrong, but hopefully all will turn out well, anyways.

For Thanksgiving if you add a little basil and black pepper you can get a stuffing-like flavor, also.

Isisrahti - yes, the measurements got changed because of the updates. I can't seem to update the recipe. But I used 1/8 of a cup or 1/4 of a cup of vinegar, so everybody can experiment with these measurements until I can get the recipe edited.

Great recipe - fun, easy, and satisfying. My only question was on the amount of vinegar - .125 cups seemed like a small amount (or maybe I'm just dingy)? Either way, I gauged enough to cover the potatoes and it seemed to work out just fine. Thank you again for a wonderful recipe!

PS: Dear "cravefood" - what does it matter whether "rawkidchef" is an actual 12yr old, a mother w/a 12yr old, or some such combo of both posting? Please, hurtful comments have no place in this section or in the raw food community. Peace.
