pumpkin seed milk

Makes about 4 cupsMy seeds are a lot less expensive than my almonds and it’s nice to change it up a bit!
Ingredients:
¾ cup pumpkin seeds, soaked
1 tablespoon raw agave nectar
3½ cup
water
½ teaspoon vanilla (not raw, I know) or achunk of vanilla bean
Preparation:
Blend pumpkin seeds with about 1/2 a cup of water until very smooth. Add agave, vanilla and the rest of the water and belnd again. strain through cheesecloth or a nut bag (I just use a kitchen towel; I don’t have
either!)

I was making pumpkin seed milk or sunflower seed milk a few months back from Ani Phyo's "Ani's Raw food Kitchen (by the way, she has some other great milk recipes) I loved it...but it was upsetting my digestion....not to sure why, but unfortunately I had to stop making it and go back to the other alternatives. But sunflower or pumpkin seed milk issss greeeaaat!!! In Ani Phyo's book she suggests to use dates instead of agave and a half of a vanilla bean.

How long do you soak the pumpkin seeds? I've been looking for a way to use my bag o'them, and just ran out of my almond milk, so this is good and timely--thanks!

hmmm... great idea! you can use panty hose if you don't want to mess up your tea towel.

MMM! absolutely delicious.. i never realized how "almondy" pumpkin seeds taste! added a little cinnamon.
