Quick n' Yummy Chili
I’ve been cooking for my family + my Aunt, Uncle, and niece, and I was making them beef chili (eww…) but it smelled SO GOOD I was dying for a good chili. I ran out to my fridge and found some good stuff to make chili with and this is what I came up with. I didn’t have to add any seasonings or salt, although I’m sure you could if you wanted to.
1 cup mushrooms, chopped, dehydrated appx 1 hr (opt)
1 large yellow squash, diced
1 large green bell pepper,
diced
1 small onion, diced
2 small tomatoes
½ jalapeno, seeded and diced
5 'sun-dried' tomato rings
¼ cup water, to desired consistency
In a bowl, stir together the mushrooms (dehydration is optional but it makes them more ‘meaty’ textured), half the squash, the bell pepper, and a quarter of the chopped onions. Set aside.
In
a food processor, puree the rest of the squash and onion with the jalapeno, dried tomato pieces, and tomatoes (and water, 1 tbsp at a time) until it reaches a consistency that you like.
Pour ‘sauce’ over the mushroom mixture and stir together. Best served warmed in the dehydrator for a bit, with some raw cornbread or cornchips!

next time i'll just puree it, seems like it would make a pretty good soup... doesn't really taste like chilli just yet though...

I tried this meal tonight! Truly delicious! I added chili seasoning and spicy sprouts to kick it up a notch! I'm marinating the second batch for lunch tomorrow. :)

beate64 I went to a party recently where the host served is guests raw minced steak, which they eat in a bread roll with raw onion and salt and pepper. they forgot to cater for us, again. people can be pretty ewwwwey cant they, and as sensitive as bricks.

HAHAHA... the crackers I made with 4 cups of fresh corn kernels, about 1/4 cup flax seeds, a dash of lime juice and some cilantro. I just blended everything up and dehydrated it for about 12 hours until it was crispy! I make them ALL the time :D. I usually don't do lime juice though - most of the time it's just corn, salt, and flax seeds. Glad you all think it looks good!

Oh, and by the way... poor thing you... I really would not be able to handle meat anymore, especially not making a dish with hamburger meat... I feel for you!

Hmm, sounds great! I will make this right now and might add some chopped bac-un to it and maybe some fresh frozen corn (not blanched). I have the whole day cravings for something spicy, hearty... that might be it. Thanks!
