Quick Spicy Avocado-corn Salad
I’m not sure if a similar recipe has been posted here before, but I love making this quick salad and couldn’t help sharing it with everyone!
½ cup fresh corn on the cob, shaved
½ cup red belled pepper, chopped
½ cup onion
or scallions, chopped
1 avocado, chopped
1 lime, squeezed
sprinkle olive oil
dash cayenne pepper, to
taste
dash black pepper, to taste
dash sea salt, to taste
some cilantro, optional
Mix all the ingredients together and you have a quick, but great tasting salad. The measurements are not exact. They never are in most of my recipes. Just trust your gut and what you like. I like my salad to be really spicy and sometimes I even add some tomatoes and cilantro. You can use this as a salsa as well, and eat it with spicy corn chips. I like to eat it with raw Spanish rice or with some nice spicy couscous that I make. I’ll make sure I post the recipe later. :)

This was really good! I tripled the recipe for a dinner party salad and it all got eaten up. I also added some cumin. :D
