Raw Cheezy Stuffed Mushrooms
I like meals that I can whip up really quick. I am using mushrooms in their plain, un-marinated state. The tangy kick from the filling is all the flavor you need in this dish. I say it serves one, but really my daughter and I shared this as a light snack. :) It took me less than 5 minutes to make. Enjoy!!
¾ cup raw cashews
1 handful of parsley
½ lemon,
juiced
½ small red onion
½ teaspoon Nutritional Yeast (optional)
20 Baby Portobello Mushrooms, Cleaned and de-stemmed
Salt to taste
Process all ingredients except mushrooms in a food processor until combined. I like to leave my filling chunky, so I only processed for about 30 seconds, scraped the bowl and processed another 10 seconds. You may add some water if the filling isn’t combining properly. Spoon a little bit into each mushroom. Garnish with parsley and sea salt, if desired. :)

Bluedolfin.. That would have been a good idea..:) Sometimes I do that when I am making a mushroom pate.. but I didn't today.

RawSarah~ Do you add the stems to the stuffing or do something else with them? If one doesn't put them in the stuffing, I can see marinating them or something else and topping the treats with them.

Oh, I love stuffed mushrooms! And I don't like marinating them either when I dehydrate. This looks delish!
