Basically I am running low on groceries and came up w/ this meal. It may be a fave now.
1 Butternut squash, peeled into noodles w/ peeler
2 tomatoes, chopped
2 clove garlic
½ cup pine nuts
½ cup cashews
1 Lime, juiced
¾ cup coconut water or regular water
½ teaspoon nutmeg
Place “noodles” and tomatoes in bowl. Blend remaing ingrediants together and pour over “noodles” & toms. Season w/ salt & pepper.
