GNOCCHI

1. Peel 1/2 of a sweet potato and cut into cubes.

2. Let sit in water overnight in the refrigerator. I am not sure if soaking helped (I have yet to make it without soaking) but I figured it would soften the potato. Soaking couldn’t hurt, right?

3. After soaking, blend sweet potato with a few basil leaves, clove of garlic, dash of salt, and tablespoon of extra virgin olive oil.

4. Blend until a mashed potato consistency is achieved.

5. Add flour to potatoes to achieve a doughy texture. I used about 1/4 cup of coconut flour and a little water.

6. Roll chunks of potato into ovals.

PESTO

7. Combine all sauce ingredients and blend until smooth.

Yes this really does look good. I made it with brown rice flour and it tasted disgusting. I would recommend only half a clove of garlic as it is very strong in this recipe. I couldn't make the pesto as there was a basil shortage in Sydney! I am sure it would taste better with the sauce or a different flour.

Sweet potato shows trypsin inhibitor activity. That means it contains an enzyme inhibitor that blocks the action of trypsin, an enzyme that digests proteins. The trypsin inhibitor prevents the digestion of protein. Sweet potatoes with higher protein levels have more of the trypsin inhibitor. This makes raw sweet potato difficult to digest. The trypsin inhibitor is deactivated by cooking.

One way the raw food diet helps people is by supplying food enzymes. Food enzymes do part of the work of digesting the raw food. Enzyme inhibitors increase the amount of work that your body needs to do to digest foods. Enzyme inhibitors force your body to produce more digestive enzymes. This uses up resources that could be used to produce detoxifying enzymes. When animals are regularly fed enzyme inhibitors in research, they become sick. Sweet potato should not be eaten raw.

Do you just grind up shredded raw coconut to make coconut flour? I'm making this for a Raw party on Wednesday night and haven't ever used coconut flour before.

Hey Coconut, this recipe would feed two adults using a whole small sweet potato. It tastes better if you make it in the morning and refridgerate ready for dinner that evening.

Is this portion mainly for 'one person' ? What if I wanted to make this for a family of four. I find these recipe's so hard to follow....they seem so small.....lol
