Makes 1 serving
Ingredients
1 red pepper, remove seeds and white part
1 young thai coconut, reserve 1/2-1C of coconut water and scoop out coconut meat
¾ teaspoon curry powder
1 clove garlic, minced
¼ teaspoon red pepper flakes
1 pinch garam masala
Recipe Directions
Open a young thai coconut and reserve coconut water you will need 1/2-1cup of coconut water. Scoop out coconut meat and place into a vita mix with red pepper, 1/2cup of coconut water, curry powder, garlic, red pepper flakes, and garam masala. Blend until smooth, slowly add the rest of the coconut water until it reaches the consistency that you like.

By kiwiThis soup sort of reminded me of a curried butternut or squash soup. It was quick and easy to prepare.

This soup was VERY quick and easy to make! And it tastes great! Either by itself or as a base with other veggies in it!! Very Good! although I may have added too much red pepper!! =)

Thanks for this recipe. I've been looking for simple soup recipes. I like that it uses one coconut.

i made it for a second time today... it is excellent and so simple! i use all the water and like to strain it, since pepper has a tendency to have more coarse skill; in addition garnish with chopped dill. it is hard to imagine flavor of this one, until you try it.
